When eating ganache, the sensation is often one of indulgence and satisfaction. The richness of the chocolate combined with the smooth, creamy texture of the ganache creates a luxurious experience for the palate.

So How Do You Make It?

To make ganache, chocolate is melted into hot cream, creating a smooth and velvety texture. Depending on the ratio of chocolate to cream and the type of chocolate used, ganache can vary in thickness and richness.

Here’s a quick and easy recipe:

Ingredients:

  • 200g (7 oz) good quality dark chocolate, finely chopped or chocolate chips
  • 200ml (7 fl oz) heavy cream (also known as double cream)
  • 1 tablespoon light corn syrup or glucose syrup

Instructions:

  1. Chop the chocolate finely and place it in a heatproof bowl.
  2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Be careful not to let it boil.
  3. Once the cream is heated, remove it from the heat and stir in the light corn syrup or glucose syrup until well combined.
  4. Pour the hot cream mixture over the chopped chocolate and let it sit for about 1-2 minutes to soften the chocolate.
  5. Gently whisk the mixture until smooth and glossy. This may take a minute or two, but keep whisking until all the chocolate is melted and the ganache is well combined.
  6. Allow the ganache to cool slightly before using it in your desired recipe. If you want a thicker ganache, let it cool for longer until it reaches your desired consistency.

With the addition of light corn syrup or glucose syrup, your chocolate ganache will have an extra glossy finish and a smoother texture.
